- 1 ½ cups all-purpose flour
- 2 teaspoons italian seasoning
- 2 teaspoons baking powder
- 1 teaspoon garlic powder
- ½ cup cornmeal
- ¾ cup mozzarella shredded
- ¾ cup pepperoni slices, cut into quarters
- 2 eggs
- ⅓ cup + 4 tablespoons pizza sauce or marinara sauce
- 1 ½ cups milk
- ¼ cup mozzarella cheese shredded
- 12 pepperoni slices
- and anything else you like!
Instructions
- Preheat the oven to 350°F and grease a standard 12-cup muffin pan.
- In a large mixing bowl, whisk together the flour, baking powder, Italian seasonings, and garlic powder.
- Stir in the cornmeal, then add the shredded mozzarella and pepperoni.
- Mix until the pepperoni and cheese are well-coated with the flour mixture.
- Add the eggs, mixing well after each addition.
- Incorporate the milk and pizza sauce until just combined; avoid overmixing.
- Using a 3-tablespoon cookie scoop, fill each muffin cup with batter.
- Place a teaspoon of pizza sauce on top of each muffin and swirl gently with a knife. Do not mix.
- Sprinkle with additional shredded cheese and pepperoni, or any other desired toppings.
- Bake for 23 to 25 minutes, or until the tops are set and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 to 10 minutes before transferring them to a cooling rack.
Notes
Feel free to add your favorite toppings, such as olives or bell peppers.
Ensure not to overmix the batter to keep the muffins light and fluffy.
