These Pizza Muffins are perfect for a quick dinner or as a delightful snack. Filled with mozzarella, pepperoni, and Italian spices, they bring all the flavors of pizza in a convenient muffin form. Easy to make and loaded with flavor, they’re a hit with both kids and adults.

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons italian seasoning
  • 2 teaspoons baking powder
  • 1 teaspoon garlic powder
  • ½ cup cornmeal
  • ¾ cup mozzarella shredded
  • ¾ cup pepperoni slices, cut into quarters
  • 2 eggs
  • ⅓ cup + 4 tablespoons pizza sauce or marinara sauce
  • 1 ½ cups milk
  • ¼ cup mozzarella cheese shredded
  • 12 pepperoni slices
  • and anything else you like!


Instructions

  1. Preheat the oven to 350°F and grease a standard 12-cup muffin pan.
  2. In a large mixing bowl, whisk together the flour, baking powder, Italian seasonings, and garlic powder.
  3. Stir in the cornmeal, then add the shredded mozzarella and pepperoni.
  4. Mix until the pepperoni and cheese are well-coated with the flour mixture.
  5. Add the eggs, mixing well after each addition.
  6. Incorporate the milk and pizza sauce until just combined; avoid overmixing.
  7. Using a 3-tablespoon cookie scoop, fill each muffin cup with batter.
  8. Place a teaspoon of pizza sauce on top of each muffin and swirl gently with a knife. Do not mix.
  9. Sprinkle with additional shredded cheese and pepperoni, or any other desired toppings.
  10. Bake for 23 to 25 minutes, or until the tops are set and a toothpick inserted into the center comes out clean.
  11. Let the muffins cool in the pan for 5 to 10 minutes before transferring them to a cooling rack.

Notes

Feel free to add your favorite toppings, such as olives or bell peppers.
Ensure not to overmix the batter to keep the muffins light and fluffy.
