Instructions
- Preheat the oven to 400°F and line a 17 x 12-inch rimmed baking sheet with parchment paper.
- Spread the shredded parmesan in an even layer on the parchment paper.
- Place the sliced onions in a single layer over the cheese, ensuring they touch but do not overlap.
- Brush the tops of the onions with olive oil.
- In a small bowl, combine garlic powder, onion powder, smoked paprika, ground cumin, black pepper, and crushed red pepper flakes if using. Sprinkle this mixture evenly over the onion slices and add a light pinch of salt and thyme leaves.
- Bake for 18 to 20 minutes, until the onions are lightly golden and the cheese is crispy around the edges.
- Allow to cool on a wire rack for 10 minutes to enhance crispiness.
- Break apart the chips and serve warm.
