- 1 cup creamy peanut butter
- 1/2 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1/4 cup butter at room temperature
- 1/4 cup creamy peanut butter
- 3/4 cup powdered sugar
- 1 tbsp milk of your choice plus more if needed
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, combine all cookie ingredients and whisk until evenly mixed.
- Scoop about 1 tablespoon of dough and roll it into a log shape. Place the logs on the prepared baking sheet, spaced 2 inches apart; you should have around 24 logs.
- Flatten each log with a fork to create a criss-cross pattern and pinch the middle to mimic the shape of a peanut.
- Bake in the oven for 10 minutes or until the edges are firm. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- In a separate bowl, cream together the room temperature butter, peanut butter, and powdered sugar using a hand mixer or stand mixer. Add milk as needed to achieve a creamy consistency.
- Spread about 2-3 teaspoons of the filling on the underside of one cookie, then top with another cookie. Repeat the process with the remaining cookies.
Notes
For a sweeter filling, add a little more powdered sugar.
Ensure that the cookies cool completely before assembling to prevent the filling from melting.
