- 1 pound ground pork
- 4 teaspoons light brown sugar (packed, optional)
- 2 teaspoons salt
- 1 teaspoon ground pepper
- 1 teaspoon fennel seeds
- 1 teaspoon ground sage or rubbed sage
- 1 teaspoon dried thyme
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon crushed red pepper flakes
Instructions
- In a large bowl, combine the brown sugar, salt, ground pepper, fennel seeds, sage, thyme, garlic powder, onion powder, and crushed red pepper flakes. Mix thoroughly.
- Add the ground pork to the bowl and use your hands to gently mix the spice blend into the pork. Break the meat into small chunks to keep it fluffy.
- Evenly level the sausage mixture in the bowl, then divide it into 6-8 equal portions for patties. Aim for eight patties for best results.
- Shape each portion into a round patty that is approximately ¾ inch thick.
- Heat a large skillet over medium heat. Use a little oil if using a stainless-steel skillet; nonstick doesn't require oil.
- Place the sausage patties in the skillet, pressing them gently for surface contact. Cook patties for 3-5 minutes on each side until golden brown. Serve warm.
Notes
For a spicier sausage, consider increasing crushed red pepper flakes.
Ensure the ground pork is higher in fat for added flavor and a softer texture.
These sausage patties freeze well; just reheat when needed.
