Ingredients

  • 1 pound ground pork
  • 4 teaspoons light brown sugar (packed, optional)
  • 2 teaspoons salt
  • 1 teaspoon ground pepper
  • 1 teaspoon fennel seeds
  • 1 teaspoon ground sage or rubbed sage
  • 1 teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes


Instructions

  1. In a large bowl, combine the brown sugar, salt, ground pepper, fennel seeds, sage, thyme, garlic powder, onion powder, and crushed red pepper flakes. Mix thoroughly.
  2. Add the ground pork to the bowl and use your hands to gently mix the spice blend into the pork. Break the meat into small chunks to keep it fluffy.
  3. Evenly level the sausage mixture in the bowl, then divide it into 6-8 equal portions for patties. Aim for eight patties for best results.
  4. Shape each portion into a round patty that is approximately ¾ inch thick.
  5. Heat a large skillet over medium heat. Use a little oil if using a stainless-steel skillet; nonstick doesn't require oil.
  6. Place the sausage patties in the skillet, pressing them gently for surface contact. Cook patties for 3-5 minutes on each side until golden brown. Serve warm.

Notes

For a spicier sausage, consider increasing crushed red pepper flakes.
Ensure the ground pork is higher in fat for added flavor and a softer texture.
These sausage patties freeze well; just reheat when needed.
