Ingredients

  • 24 oz sour cream/light or regular
  • 2 cups shredded colby jack cheese or cheese of choice
  • 1 packet taco seasoning (homemade or store-bought)
  • 1 packet ranch seasoning (homemade or store-bought)
  • 10 oz can rotel with chiles (drained)
  • optional substitute for sour cream: greek yogurt or blended cottage cheese for more protein


Instructions

  1. In a bowl, combine sour cream with taco seasoning and ranch seasoning.
  2. Add shredded cheese and drained Rotel, stirring to mix well.
  3. Optionally, add a pinch of salt to taste.
  4. Chill in the refrigerator for 30 minutes to 1 hour.
  5. Serve with chips or fresh veggies.

Notes

Make sure to drain the Rotel well to avoid excess moisture in the dip.
For a healthier option, substitute sour cream with Greek yogurt or blended cottage cheese.
Chilling the dip enhances the flavor, but it can also be served immediately.
