Instructions
- Preheat your oven to 425ºF and set a wire rack in a rimmed baking sheet.
- In a small bowl, mix baking powder, salt, garlic powder, smoked paprika, and black pepper to create a seasoning blend.
- In a large bowl, drizzle chicken thighs with olive oil, then toss gently to coat evenly.
- Sprinkle the seasoning mix over the chicken, tossing again until fully coated.
- Place the seasoned chicken thighs on the wire rack in the baking sheet, ensuring juices don't spill into the oven.
- Bake for 35 to 40 minutes, until the chicken is golden and crispy.
- Check the internal temperature of the largest thigh to ensure it reaches at least 165ºF. Let rest for 10 minutes before serving.
Notes
Using a rimmed baking sheet prevents juices from spilling into the oven.
Letting the chicken rest allows the juices to redistribute for better flavor.
