  • 3/4 cup mashed extra-ripe bananas (about 2 medium bananas)
  • 1/4 cup peanut butter
  • 1 cup rolled oats
  • 1/3 cup semi-sweet or dark chocolate chips
  • 1/2 tsp pure vanilla extract
  • pinch of sea salt
  • 1/2 tsp ground cinnamon
  • 1/3 cup chopped walnuts or pecans


Instructions

  1. Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly spray with nonstick cooking spray.
  2. In a medium bowl, mash the bananas until mostly creamy with few chunks remaining. Add peanut butter and mix until well combined.
  3. Stir in the oats and chocolate chips until blended evenly.
  4. Transfer the mixture into the prepared loaf pan and smooth out the top.
  5. Bake in the center of the oven for 22-26 minutes until the edges are golden brown and the bars are set. Let cool completely in the pan before slicing.

Notes

Ensure the bananas are extra-ripe for the best flavor and sweetness.
Feel free to substitute peanut butter with almond butter for a different taste.
Store leftover bars in an airtight container for up to a week.
