- 3/4 cup mashed extra-ripe bananas (about 2 medium bananas)
- 1/4 cup peanut butter
- 1 cup rolled oats
- 1/3 cup semi-sweet or dark chocolate chips
- 1/2 tsp pure vanilla extract
- pinch of sea salt
- 1/2 tsp ground cinnamon
- 1/3 cup chopped walnuts or pecans
Instructions
- Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly spray with nonstick cooking spray.
- In a medium bowl, mash the bananas until mostly creamy with few chunks remaining. Add peanut butter and mix until well combined.
- Stir in the oats and chocolate chips until blended evenly.
- Transfer the mixture into the prepared loaf pan and smooth out the top.
- Bake in the center of the oven for 22-26 minutes until the edges are golden brown and the bars are set. Let cool completely in the pan before slicing.
Notes
Ensure the bananas are extra-ripe for the best flavor and sweetness.
Feel free to substitute peanut butter with almond butter for a different taste.
Store leftover bars in an airtight container for up to a week.
