This Air Fryer Granola combines rolled oats, mixed nuts, and seeds for an irresistible snack. With honey and maple syrup for sweetness, it’s simple to make and perfect for healthy breakfasts or quick snacks.

Ingredients

  • 2 cups rolled oats
  • 1/2 cup mixed nuts, roughly chopped (almonds, cashews, and pecans)
  • 5 tablespoons seeds (pumpkin and sunflower seeds)
  • 3 tablespoons honey
  • 2 tablespoons maple syrup
  • 3 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 tablespoons shredded coconut
  • 1/3 cup dried cranberries or any mix-ins of choice


Instructions

  1. In a small bowl, whisk together honey, maple syrup, coconut oil, vanilla extract, cinnamon, and salt.
  2. In a large bowl, combine oats, mixed nuts, and seeds.
  3. Pour the wet ingredients over the dry ingredients and mix until all are well-coated.
  4. Line the air fryer basket with parchment paper or use air fryer liners.
  5. Transfer the mixture into the basket, pressing down to create an even layer.
  6. Air fry at 300°F for 8 minutes.
  7. Open the basket and sprinkle shredded coconut on top; continue air frying for another 5 to 6 minutes or until golden brown.
  8. Transfer the granola mixture onto a wire rack and let it set for at least 20 minutes.
  9. Once set, break into clusters and mix in dried cranberries or other desired ingredients; store in an airtight container for up to one month.

Notes

Feel free to customize with different nuts and seeds based on your preference.
Make sure to let the granola cool completely before storing to ensure it remains crunchy.
