Ingredients

  • 2 cups day-old cooked white rice, cold from the fridge
  • 2 tablespoons avocado oil or any neutral flavored oil
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, freshly minced
  • 1/4 teaspoon pepper
  • 1/2 cup frozen peas and carrots
  • 2 large eggs
  • 1 teaspoon sesame oil


Instructions

  1. In a large bowl, mix the avocado oil, soy sauce, oyster sauce, garlic, ginger, and pepper.
  2. Add the cold rice to the bowl and toss thoroughly, breaking apart any clumps until the rice is evenly coated and glossy.
  3. Spread the seasoned rice onto an air fryer liner in the basket, and air fry at 400°F for 8 minutes without stirring.
  4. After 8 minutes, remove the basket and sprinkle the frozen peas and carrots over the rice. Toss to combine and scrape the crispy bits from the bottom.
  5. Return the mixture to an even layer and air fry for an additional 4 minutes.
  6. Next, create a small well in the center of the rice, crack both eggs into the well, and air fry for 3 minutes until the egg whites are set.
  7. Break the eggs into the rice, add the sesame oil, and toss everything together.
  8. Serve the fried rice warm, garnished with scallions if desired.

Notes

Using day-old rice helps prevent the dish from becoming mushy.
Feel free to add other vegetables or proteins based on your preference.
